Yellow Valley makes very tasty farmhouse cheese, in a responsible and fair-trade way.
How do we make such great cheese? Simple - we take fresh milk from local farmers (who we know well), test it in our lab (for your peace of mind), slowly and gently pasteurize it, then make our cheese using traditional methods and only completely natural ingredients. All of our cheeses are lovingly handmade by our wonderful cheesemakers (not in a big automated factory like most imported cheese) and cared for everyday as they mature into the most delicious cheese in China!
How are we responsible? We started making cheese to address a social concern. The pressure in the dairy market in China has been highlighted by some unpleasant stories over the past two years. Often it is the small-scale farmer who bears the brunt of this pressure. We ensure all our farmers receive a fair-trade price for their milk (20% above the base price), and we work with them to improve their yields and the conditions of their cows. We also work in an area where incomes are very low and employment prospects are not good. Many of our workers, for the first time, have a secure income and can afford to pay their families' medical bills and education costs.
